Typical product of excellence is the olive oil, as in the rest of the Marche region. Among the first you can taste the egg pasta such as tagliatelle, macaroni Campofilone or chitarrine, spaghetti with tuna sauce, green olives and tomato. Alternatively, soups made from cereals or legumes: soup of farro, lentils or beans. A typical dish is the fried mixed Ascoli, whose stuffed olives are well known: the olives are pitted and stuffed with a filling of meat, liver and tomatoes, breaded and then fried. With olives it is also cooked the turkey all’ascolana, flavored with herbs, juniper berries and liver. The cake “Zuppa Inglese” is a sweet very widespread and is commonly called sweet pizza. Excellent wines there are Rosso Piceno, Rosso Piceno Superiore and the white Falerio Hills Ascoli.
