The culinary tradition typical of Campobasso is characterized by simple dishes, such as zucchini, sausages and meat. Among the latter they stand out in particular capocollo seasoned, crackling, bacon, ham, pork sausage, headcheese. Quality products of the territory are porcini, champignon, truffles and cheeses as well as mozzarella and pecorino. As the first dishes are widespread soups made from vegetables as lentils, barley, beans, homemade pasta sauce with beans and pork rind. The dish Typical is the Caponata, made from a biscuit wheat (Tarallo) wet with water and vinegar and flavored with tomatoes, celery, peppers, anchovies, black olives and hard-boiled eggs. Among the fish dishes very good is dried cod cooked with chopped nuts. For dessert there is “milk pan” covered with a delicious layer of chocolate hazelnut. The main wines are Biferno (white, red and rosé) and Moscato.
