Most recipes from the province of Enna combine vegetables, legumes, and cheeses, reflecting in the local cuisine a region that is predominantly agricultural and dedicated to sheep farming, characterized by simple yet flavorful dishes. Typical dishes include pasta with fava bean purée, cauliflower, or broccoli; with fresh fava beans; “alla carrettiera” style; or with eggplant and tomatoes; as well as wild asparagus, slightly bitter chicory, and wild fennel. As for meats, there is pork, lamb, and goat, either roasted or grilled, along with flavorful cheeses, including Piacentino and ricotta. Among the delicious desserts are cookies such as “vucciddati,” filled with dried figs, honey, candied fruit, and toasted almonds, or “cannateddi,” typical of Easter celebrations, served with a small glass of Malvasia, Finocchietto, or Noceto.
