Nuoro is famous for the roasted meat, pecorino cheese and sausage homemade that are served along with a soft bread called “spianata” or a crispy bread called bread “carasau” or “music paper”. Very good is also “bread frattau” made with bread carasau immersed in boiling broth and seasoned alternating layers of bread with cheese and tomato sauce together with the abundant poached egg, in addition to “sos maccarrones furriaos”, dumplings served with white fresh cheese melted together and “sos maccarrones de busa” big spaghetti handmade. Excellent is pig cooked on a spit, in addition to the “sheep in coat”. Among the desserts very good is “sa sebada” two thin circles of dough enclosing fresh cheese flavored with lemon rind, fried in hot oil and sprinkled with honey or sugar, or “s’aranzada” prepared with peel ‘orange peel, pieces of toasted almonds and honey. As regard the wines we mention Mandrolisai, the Monica and the Malvasia. The typical liquor is myrtle.
