The province of Bergamo is rich in gourmet products and quality, starting with the various types of cheese. They stand out, in particular, the Branzi, formaggella Valtellina, il Formai de Mut, Taleggio, Gorgonzola, stracchino and cheese of goats. With all of these cheeses, one of the most traditional dishes of the place is the polenta taragna, consumed mainly in the winter. The “Casonsèi de la Bergamo” is a first dish with the variant, compared to those from Brescia, of bacon as a topping, and “Scarpinocc de Par”, made with fresh pasta. But also soups, risottos, barley soup, strangolapreti and dumplings with spinach. As for the second dishes, we find the snails stewed, fried frogs, black pudding and fresh salami.Many sweets among which there are the cookies of Clusone, coated with chocolate; the biscuits of San Pellegrino; the cake of Treviglio and the Donizetti cake that consists in a sort of donut friable with candied of pineapple and apricot. Valcalepio has become a very popular area for wine production of red, white and muscat.
