The gastronomic tradition of this province combines the traditions of Friuli, Slovenia and Austria, starting with the traditional dish of Grado with “boreto to graisana” or fish soup and the typical dish of Gradisca, the “jota”, a soup made from beans, potatoes, pork rind, smoked pork ribs and sauerkraut. Among the first there are dumplings of bread with bacon, liver dumplings and the “vrzota”, cabbage of St. Andrew, the basis of many traditional dishes, such as cabbage soup with cornmeal. In the dishes you can taste the “kaiserfleish”, rack of smoked pork served with sauerkraut and “goulash”. As for the desserts there are “gubana” of Gorizia, made from sweet leavened dough stuffed with walnuts, raisins, pine nuts, sugar, brandy and lemon peel; the “clamp”, which is the traditional cake and “lepalatschinken”, omelettes stuffed with apricot jam or chocolate. Excellent DOC wines such as Cabernet, Merlot, Refosco and, among whites, Pinot.
