Inevitable on the tables of Lecce and Salento are the olive oil and the wine. This area produces extra virgin olive oil DOP Terre d’Otranto, while among the wines we indicate: the Aleatico of Puglia DOC, the Alezio DOC, the Copertino DOC, the Galatina DOC, the Leverano DOC, the Nardò DOC and the Negroamaro DOC. Very important the contribution of the sea to the kitchen of Lecce. Always present the mussels cooked in various ways in addition to different types of crustaceans and fishes. Among the culinary excellence is the “rustico” that consists of two discs of dough that are filled with mozzarella, tomato and bechamel. Among the bakery products over the inevitable artisan breads, pizzas, focacce, taralli and friselle, discs of toasted bread that are wet with water and seasoned with tomato and salt. Poor but tasty dishes are the “beans and chicory” consisting of a mashed beans accompanied by chicory cooked and “ciciri and tria” pasta and chickpeas with the addition of a few pieces of fried dough. Among the desserts, however, you can choose the “pasticciotto” composed by pastry stuffed by custard and baked.
