Among the tipical Brescian dishes there are the famous “casonsèi”, large ravioli, prepared by hand and stuffed with ricotta cheese, eggs, cheese and meat seasoned with melted butter and sage. In mountain areas, excellent is polenta taragna, a botched polenta with different cheeses, the soups with field greens, rice soup and chicken and tripe “camuna”, served with beans and bitter roots. The lake area is characterized by the fish dishes cooked in many different ways. Also typical are snails, cooked in a pan along with grated Parmesan cheese and spinach, and the frogs to “camuna”, prepared and served with butter and milk. Among the tasty cheeses there are the Bagoss, the Stilter, the casolet and the formagelle. As for desserts, the main one is the Bossolà of Brescia, a typical traditional Christmas sweet. Among the wines there are the Curtefranca and Garda.
