Products made according to old recipes characterize the traditional cuisine of this province, mainly made of simple dishes full of flavor, starting with the famous buffalo mozzarella, food appreciated and exported all over the world, from which it produces butter, burrino, burrata and fresh ricotta cheese or dried. The climate and the nature of the terrain also makes this area an interesting area for olive production, which led to the request for three DOP extra virgin olive oils: “Terre Aurunche”, the “Terre del Matese” and the “Hills Caiatine”. The first dishes are generally made from homemade pasta (gnocchi, noodles) and vegetables. While the main dishes are prepared with meat obtained from local farms for the preparation of excellent sausages as capicollo, prosciutto di Monte, the bacon and the filet of Vairano Patenora, famous for the “sausiccia”, kept in special vessels terracotta and produced by potters of the high Caserta. Very well known are the cherry, peach and the fomous apple Annurca. Wines that are produced in the area are the Roccamonfina, Terre del Volturno and the Galluccio that is a DOC as well Asprinio Aversa.
