Typical dishes of the province are the noodles with beans, the “tordelli” with meat and lasagne “intordellate”, without forgetting the “testaroli” lunigiani, formed by a thin sheet of dough, cooked in cast-iron pans , then topped with pesto and pecorino. Excellent product is the lard, aged for at least six months in Carrara marble basins with many spices. Great are the rice cake and the “cake of erbi”, stuffed with eggs, cheese and wild vegetables. The typical dessert is the “spongata”, a cake of puff pastry filled with jam and nuts. Among the wines of particular importance there is the Candia.
