Enriched with herbs and spices, the Pisan cuisine is based on foods that come from ancient farming tradition. Worthy of note are the products of the earth like mushrooms, chestnuts, corn and truffles. There are also many salami such as sausage, bacon and buristo Tuscan. Among the first we find the soup of white beans of San Michele, the bavettine to fish, bread soup with beans, pumpkin and mixed vegetables. The other main dishes are pork liver, eel and stockfish. Tripe of Pisa is cooked with onions, tomatoes and bacon. For dessert we recommend the cake with “bischeri”, made with pine nuts, cho-colate, raisins and candied citron, accompanied by an excellent Vin Santo del Chianti. Among the local wines are the Chianti, Colli Pisani, Rosso di San Miniato and Trebbiano.
