Even for the province of Vercelli the cuisine finds its inspiration in the country tradition. Signature dish is the “panissa of Vercelli”, rice cooked with “salam d’la doja” (salami preserved in fat), bacon and beans of Saluggia, these are also a typical product of Vercelli plain. With rice (in quality Baraggia DOP) you cook several main dishes served in many different ways. Also here are very common the frogs, cooked in many different ways, they are added to other dishes that are affinity throughout in all the regional cuisine and is also affected from the proximity of the Lombardy, acquiring its culinary traditions. Among the cheeses from menzionale the Toma Piemontese DOP and the typical “toma valsesiana”. The sweet symbol of the province and of the city of Vercelli are the “Bicciolani” (cookies made of a rich pastry that combines a blend of spices) and the “truffle”, a combination of soft sponge cake and whipped cream covered with brittle waves of chocolate. Among the wines we highlight the Gattinara DOCG and the Bramaterra DOC.
