The product symbol of the region is certainly the Fontina of Aosta Valley DOP, typical cheese produced from cow’s milk; to it joins the Fromadzo of Aosta Valley, another typical cheese also with the brand DOP. These cheeses are elements that are often found in regional dishes such as “polenta concia“, robust dish prepared with polenta cornmeal and abundant fontina. Another product symbol of the Valley is the Arnad lard produced in the town of the same name. This product is skillfully seasoned and flavored with special spices. To it joins the Jambon de Bosses, a special type of local ham and the Mocetta, of beef or ibex seasoned and expertly dried. These products alongside the wines that are produced in the valley and thanks to the special climate of the region up to an altitude of 1,200 meters. Among the main brand DOC wines there are : the Arnad Montjovet, the Enfer d’Arvier, the Blanc de Morgex et de la Salle and the Donnas. Among the typical dishes of the region there is also the “cutlet Valdaostan“, steak stuffed with fontina cheese and ham, and the “carbonade“, veal stew cooked in wine. Among the sweets instead you find the blanc-manger (sweet made with cream, sugar and vanilla).
