In the culinary tradition of Piacenza the local products that over time have become very well known outside of the province itself, are “pisarei and fasò”, dumplings of bread with pinto beans and tomato sauce, the “tortelli with the tail” and the “rice bomb” of Bobbio, pie stuffed with pigeon meat and mushrooms. Excellent salami of which the three most famous, are Salame Piacentino, Piacenza Coppa and Pancetta Piacentina. Numerous are seconds, including duck and roast guinea fowl, donkey stew, the snails to Bobbio. Among the fish dishes we can taste smoked eel, the fried of ambolina, catfish, cod stew. Famous is polenta “consa”, with layers of sauce and parmesan cheese. For the sweet tooth, stand out sweet donut, almond cake, the turtlitt (fritters), sbrisolona cake. Excellent wines are Gutturnio, Ortrugo, a white wine whose production DOC is allowed only in the province of Piacenza, not to mention the Monterosso, Vin Santo di Vigoleno and Malvasia.
